I love nothing more than a fresh bean salad. A lovely way to get plenty of protein into your diet. Great for warm spring, summer days.
- 25g peppers, diced
- 1lime, zest and juice
- 1.5tbsp maple syrup
- 180g sweetcorn, drained
- 400g tin kidney beans, drained
- 6 radish, sliced
- 1 avocado, sliced
- Place the lime and maple in a small bowl and whisk to form a dressing.
- Place the peppers, kidney beans, sweetcorn and radish in a bowl and toss in the dressing, season to taste. Top with sliced avocado.
