Mexican Bean Salad

I love nothing more than a fresh bean salad. A lovely way to get plenty of protein into your diet. Great for warm spring, summer days.

 

Serves 4

Ingredients

  • 25g peppers, diced

     

  • 1lime, zest and juice

     

  • 1.5tbsp maple syrup

     

  • 180g sweetcorn, drained

     

  • 400g tin kidney beans, drained

     

  • 6 radish, sliced

     

  • 1 avocado, sliced

     

  • Seasoning

Directions

  1. Place the lime and maple in a small bowl and whisk to form a dressing.
  2. Place the peppers, kidney beans, sweetcorn and radish in a bowl and toss in the dressing, season to taste. Top with sliced avocado.
