A lovely warming soup for all seasons.
- 4tbsp oil
- 2 onions, diced
- 3 garlic cloves, minced
- 200g carrots, chopped
- 200g potatoes, chopped
- 1 red pepper, chopped
- 200g red lentils
- 1250ml veg stock
- 4tsp paprika
- ½ lemon
- Heat the 2tbsp oil, sautee the onion and garlic.
- Add the carrot, pepper and potatoes. Add the lentils and stock and bring to the boil.
- Simmer for 20minutes, blitz and stir in 2tsp paprika, lemon juice and season.
- Meanwhile heat the remaining oil along with the 2tsp paprika and heat gently for a few minutes until all the flavours are mixed. Ladle into bowls and drizzle over the warm oil.
