Red Lentil Soup with Paprika Oil

A lovely warming soup for all seasons.


Serves 4


  • 4tbsp oil


  • 2 onions, diced


  • 3 garlic cloves, minced


  • 200g carrots, chopped


  • 200g potatoes, chopped


  • 1 red pepper, chopped


  • 200g red lentils


  • 1250ml veg stock


  • 4tsp paprika


  • ┬Ż lemon


  1. Heat the 2tbsp oil, sautee the onion and garlic.
  2. Add the carrot, pepper and potatoes. Add the lentils and stock and bring to the boil.
  3. Simmer for 20minutes, blitz and stir in 2tsp paprika, lemon juice and season.
  4. Meanwhile heat the remaining oil along with the 2tsp paprika and heat gently for a few minutes until all the flavours are mixed. Ladle into bowls and drizzle over the warm oil.
