A great alternative to a standard pancake and just as easy to make.

Ingredients
- 4tbsp coconut oil
- 250ml almond milk
- 2tbsp coconut sugar
- 1tsp vanilla extract
- 125g plain flour
- 1tsp baking powder
- 1/2tsp cinnamon
- 2 apples, peeled, cored and cut into rings
Directions
- Heat the coconut oil in a pot over a low heat.
- In a bowl, whisk the flour, baking powder, coconut sugar, milk, cinnamon and vanilla until well combined.
- Dip the apple rings into the batter and let the excess dip off, then place into the hot oil. Fry for 3-4mins, until golden, then flip. Transfer onto kitchen paper to absorb the excess.
