Apple Fritters

A great alternative to a standard pancake and just as easy to make.


Serves 2


  • 4tbsp coconut oil


  • 250ml almond milk


  • 2tbsp coconut sugar


  • 1tsp vanilla extract


  • 125g plain flour


  • 1tsp baking powder


  • 1/2tsp cinnamon


  • 2 apples, peeled, cored and cut into rings


  1. Heat the coconut oil in a pot over a low heat.
  2. In a bowl, whisk the flour, baking powder, coconut sugar, milk, cinnamon and vanilla until well combined.
  3. Dip the apple rings into the batter and let the excess dip off, then place into the hot oil. Fry for 3-4mins, until golden, then flip. Transfer onto kitchen paper to absorb the excess.
