Pasta, one of our all time favourite dinners and this one is no exception.
- 100g spinach
- 100g kale, stems removed
- 2 garlic cloves
- 30g cashews
- 1tbsp lemon juice
- 2tbsp olive oil
- Splash pasta water
- Cook the pasta according to instructions. Remove the pasta and keep the water.
- Add the spinach, kale, garlic and cashews to the water and cook for 5mins.
- Drain and add to a blender along with the olive oil, lemon juice and a splash of the pasta water. Blitz. Toss cooked pasta in sauce and serve.
