Chickpea Almond Butter Curry

What a yummy curry. Sweet, nutty and packed full of plant based protein and iron.


Serves 4-6


  • 1tbsp oil


  • 1 onion, diced


  • 3 garlic cloves, crushed


  • 1 thumb sized piece of ginger, peeled and grated


  • 1tsp fenugreek


  • 2tsp cumin


  • 1tsp ground coriander


  • 1tsp turmeric


  • 300ml veg stock


  • 2tbsp almond butter


  • 200g spinach


  • Rice to serve


  1. Heat the oil and cook the onion until soft.
  2. Add the garlic and ginger. Stir in the spice for 1minute.
  3. Mix the stock and almond butter together until smooth and stir into the veg. Add chickpeas and spinach and simmer. Serve with rice.
