What a yummy curry. Sweet, nutty and packed full of plant based protein and iron.
Serves 4-6
Ingredients
- 1tbsp oil
- 1 onion, diced
- 3 garlic cloves, crushed
- 1 thumb sized piece of ginger, peeled and grated
- 1tsp fenugreek
- 2tsp cumin
- 1tsp ground coriander
- 1tsp turmeric
- 300ml veg stock
- 2tbsp almond butter
- 200g spinach
- Rice to serve
Directions
- Heat the oil and cook the onion until soft.
- Add the garlic and ginger. Stir in the spice for 1minute.
- Mix the stock and almond butter together until smooth and stir into the veg. Add chickpeas and spinach and simmer. Serve with rice.
