Thai Ginger Salad

Oh my goodness, this is fresh and punchy with the most delicious crunch!!

Serves 4

Ingredients

  • Dressing – 50g crunchy nut butter

     

  • 2tbsp rice vinegar

     

  • 3tbsp sesame oil

     

  • 2 limes, juiced

     

  • 1tbsp soy sauce

     

  • 3cm piece ginger, grated

     

  • Salad – 2 carrots, grated

     

  • 400g cabbage, shredded (I used red and white)

     

  • 2 peppers, finely sliced

     

  • 150g edamame beans

     

  • 1 red onion, finely sliced

     

  • 1 bunch coriander, chopped

Directions

  1. Put all the dressing ingredient into a blender and blitz until smooth. Toss all salad together and them toss in dressing. Garnish with chopped peanuts and a few coriander leaves
