Oh my goodness, this is fresh and punchy with the most delicious crunch!!
Serves 4
Ingredients
- Dressing – 50g crunchy nut butter
- 2tbsp rice vinegar
- 3tbsp sesame oil
- 2 limes, juiced
- 1tbsp soy sauce
- 3cm piece ginger, grated
- Salad – 2 carrots, grated
- 400g cabbage, shredded (I used red and white)
- 2 peppers, finely sliced
- 150g edamame beans
- 1 red onion, finely sliced
- 1 bunch coriander, chopped
Directions
- Put all the dressing ingredient into a blender and blitz until smooth. Toss all salad together and them toss in dressing. Garnish with chopped peanuts and a few coriander leaves
