Coconut Rice

I have been making this rice since I was a student and only came back to making it recently. It is so good you could eat it alone with salad.

 

Serves 4

 

Ingredients

  • 250g basmati rice

     

  • 1 400ml tin coconut milk

     

  • 200ml water

     

  • 1.5 limes, juiced

     

  • Salt

Directions

  1. Put all in a pot, pop on the lid and simmer for 20mins, stirring occasionally.
