Potato and Coconut Stew

This is a combo between a stew and a soup. I love big hearty meals like this!


Serves 4-6


  • 1tbsp oil


  • 2 onions, diced


  • 2 garlic cloves, crushed


  • 2 thumb sized pieces ginger, grated


  • 3 sweet potatoes, peeled and diced


  • 3 potatoes, diced


  • 1ltr veg stock


  • 1 tin coconut milk


  • 1tbsp curry powder


  • 1/2tbsp cayenne


  • 200g red lentils


  • 150g brown rice


  • Handful of spinach


  1. Heat the oil and cook the onion and garlic until soft. Stir in the ginger.
  2. Add all remaining ingredient and simmer for 30mins. Serve with salad and crunchy bread/flatbread.
