Oh but I love a good energy bar J
- 50g oats
- 50g puffed rice
- 200g medjool dates, soaked
- 3tbsp honey
- 3tbsp almond butter
- 2tbsp oil
- 50g seeds
- 80 pecans, chopped
- Mix the oil, honey and nut butter in a pot and bring to a simmer.
- Drain and mash the dates and mix with the warm nut butter mix until a paste.
- Mix all the remaining dry ingredient in a bowl, stir in the wet mix.
- Press into a lined brownie tin and bake for 10mins. Leave to cool and slice.
