This is a great (almost) one pot dinner that can be prepped well ahead of time and only tastes better with time.
Oven 200c
Serves 4-6
Ingredients
- 1tbsp oil
- 2 red onions, diced
- 2 green peppers, diced
- 1 parsnip, diced
- 1 tin sweetcorn
- 1 carton kidney beans
- 1 carton cannolini beans
- 1 carton black beans
- 2 cartons chopped tomatoes
- 2tsp smoked paprika
- 2tbsp Worchester sauce
- 1tbsp maple syrup
- 6 vegetarian sausages, cooked and chopped
- 2 soda farls, bread crumbed
- 100g cheese, grated
- Sprinkling of seeds
Directions
- Heat the oil in a pot and cook the onion and peppers until soft.
- Stir in the beans, spices, chopped tomatoes and maple syrup and simmer with the lid on for 20mins.
- Meanwhile, cook the sausages. Chop them and stir them into the pot. Pour into an ovenproof dish.
- Mix the soda crumbs, seeds and cheese together in a bowl and sprinkle over the bake. Pop in the oven for 30mins, or until brown. Serve with salad and avocado
