A brill, easy mid week meal for a busy mummy.
- 8 boneless chicken thighs, cut into large pieces
- Chopped parsley
- Marinade – 5tbsp olive oil
- 2 garlic cloves, crushed
- 1tsp ground cinnamon
- 1tsp allspice
- 2tsp oregano
- 2tsp paprika
- 2tbsp honey
- Mix all marinade ingredient together, toss chicken in it and pop in fridge for minimum 1hour.
- Thread onto skewers or put in ovenproof dish. Cook turning frequently until browned. Sprinkle with chopped parsley and serve with rice or couscous.
