Squash and Thyme Soup

The sweetness of squash makes this such a delicious soup!


Oven 200c


  • 1 large squash, peeled and diced


  • 2tbsp oil


  • 3 garlic cloves, crushed


  • 2tsp thyme leaves


  • 1 onion, diced


  • 400ml veg stock


  • 1 tin coconut milk


  • 1/2tsp cayenne pepper


  1. Mix the oil, garlic and thyme. Place the chopped squash on a try and toss in the flavoured oil. Place in the oven and cook for 30 mins, turning occasionally.
  2. Heat a little oil in a pot and cook the onion until soft.
  3. Stir in the squash, stock, coconut milk and cayenne. Heat to a simmer. Blitz and enjoy.
