The sweetness of squash makes this such a delicious soup!
- 1 large squash, peeled and diced
- 2tbsp oil
- 3 garlic cloves, crushed
- 2tsp thyme leaves
- 1 onion, diced
- 400ml veg stock
- 1 tin coconut milk
- 1/2tsp cayenne pepper
- Mix the oil, garlic and thyme. Place the chopped squash on a try and toss in the flavoured oil. Place in the oven and cook for 30 mins, turning occasionally.
- Heat a little oil in a pot and cook the onion until soft.
- Stir in the squash, stock, coconut milk and cayenne. Heat to a simmer. Blitz and enjoy.
