This is a lovely, old, traditional country soup. It is packed with veg and will keep you running on full until dinner time
- 1tbsp oil
- 1 onion, diced
- 1 carrot, diced
- 1 stick of celery, cut
- 2 garlic cloves, crushed
- 4 potatoes, chopped
- 1ltr veg stock
- ¼ savoy cabbage, shredded
- Heat the oil in a pot and cook the onion, garlic, carrot and celery until soft.
- Add the potato and stock, pop on a lid and simmer for 20mins.
- Blitz until smooth. Stir through the cabbage and simmer for a further 10mins. Enjoy.
