Potato and Cabbage Soup

This is a lovely, old, traditional country soup. It is packed with veg and will keep you running on full until dinner time


Serves 4


  • 1tbsp oil


  • 1 onion, diced


  • 1 carrot, diced


  • 1 stick of celery, cut


  • 2 garlic cloves, crushed


  • 4 potatoes, chopped


  • 1ltr veg stock


  • ┬╝ savoy cabbage, shredded


  1. Heat the oil in a pot and cook the onion, garlic, carrot and celery until soft.
  2. Add the potato and stock, pop on a lid and simmer for 20mins.
  3. Blitz until smooth. Stir through the cabbage and simmer for a further 10mins. Enjoy.
