Ingredients
- 1tbsp oil
- 10 boned chicken thighs
- 2tsp paprika
- 2tsp cumin
- 2 onions, chopped
- 2 peppers, chopped
- 3 limes, juiced
- 400ml tin of coconut milk
- 1 carton chopped tomatoes
- Couscous to serve
Directions
- Heat the oil in a pan and add the chicken, cook until browning.
- Remove the chicken and add the onion and pepper and cook until soft.
- Stir in all remaining ingredient and return the chicken to the pan. Simmer for 20mins. Serve with couscous.
