Rosemary and Potato Stew

This was an accidental make that was just so delicious I had to write it down. Yummy warm flavours that’s so easy to make.


Serves 2




  • 2tbsp oil


  • 1 leek, sliced in rings


  • 2 carrots, diced


  • 3 full rosemary sprigs


  • 300ml veg stock


  • 2 potatoes, diced


  1. Heat the oil in a pan, stir in the leeks, rosemary and carrots and cook for a few minutes. Pop on the lid and sweat for five minutes longer.
  2. Add stock and potato, replace the lid and simmer for 15minutes. Serve with salad.
