This was an accidental make that was just so delicious I had to write it down. Yummy warm flavours that’s so easy to make.
- 2tbsp oil
- 1 leek, sliced in rings
- 2 carrots, diced
- 3 full rosemary sprigs
- 300ml veg stock
- 2 potatoes, diced
- Heat the oil in a pan, stir in the leeks, rosemary and carrots and cook for a few minutes. Pop on the lid and sweat for five minutes longer.
- Add stock and potato, replace the lid and simmer for 15minutes. Serve with salad.
