Honey Nut Bars

These babies are sweet, sticky and kick a HEALING HONEY PUNCH!

  • Base – 100g cashews, blitzed

     

  • 1tbsp manuka honey

     

  • 1tbsp coconut oil

     

  • Top – 5 dates, soaked

     

  • 5tbsp peanut butter

     

  • 1tbsp manuka honey

     

  • 2tbsp water

     

  • 40g 80% chocolate, melted

     

  • Sprinkling of unsalted nuts, chopped (optional)

Directions

  1. Firstly make your base. Blitz the cashews until crumbly. Stir in the honey and oil then press into a lined brownie tin. I keep my base about 2cm thick. Pop in the fridge.
  2. Now make the top, simply put the dates, 2tbsp of the water they soaked in, honey and peanut butter into a blender and blitz until it comes together as a thick paste. Remove the tray from the fridge and spread this on top (if it is very sticky, keep dipping the spoon into boiling hot water as you spread it out to stop it sticking)
  3. Lastly, heat the chocolate in the microwave for around 2-3minutes, or until melted and pour over the top. If you have some unsalted peanuts, chop them up and sprinkle on the top. Return to the fridge and leave to set for around 30mins. Slice and enjoy!! They are sticky so remember to clean any mucky fingers
