Got left over rice, don’t know what to do with it – try this! Mega hit with my family.
- 1tbsp oil
- 200g cooked rice
- 2tsp – cumin, coriander, paprika
- 1tsp sugar
- 1 carton chopped tomatoes
- 1 carton black beans
- 6 wrap to serve
- 150g grated cheese
- Heat the spices in the oil until fragrant. Stir in the rice until coated.
- Add the beans, sugar, tomatoes and simmer. Serve with grated cheese in wraps, salad on the side.
