Mexican Rice

Got left over rice, don’t know what to do with it – try this! Mega hit with my family.

Serves 4



  • 1tbsp oil


  • 200g cooked rice


  • 2tsp – cumin, coriander, paprika


  • 1tsp sugar


  • 1 carton chopped tomatoes


  • 1 carton black beans


  • 6 wrap to serve


  • 150g grated cheese


  1. Heat the spices in the oil until fragrant. Stir in the rice until coated.
  2. Add the beans, sugar, tomatoes and simmer. Serve with grated cheese in wraps, salad on the side.
