Pasta with Goats Cheese, Courgette and Pepper

Ready in two swift moves….does this sound good, or does this sound good?

Serves 4


  • 2tbsp oil
  • 1 onion, diced
  • 1 courgette, diced
  • 3 garlic cloves, chopped
  • 3 peppers, cut in chunks
  • 150g soft goats cheese
  • 1tsp capers
  • handful of toasted pine nuts


  1. Heat the oil in a pot and cook the onion, courgette and garlic for a few minutes until soft.
  2. Stir in the peppers and cook for a few minutes longer, then pop on the lid and sweat on low for 15minutes.
  3. Put pasta on to cook. Drain pasta, toss in the goats cheese and stir through the vegetables along with the capers. Sprinkle pine nuts on top.
