Chicken Mango

This is naturally sweet, a real one pot wonder. Give it a go!

  • 1tbsp coconut oil

     

  • 4 chicken breast, chopped

     

  • 2 onions, thinly sliced

     

  • ½ red pepper, sliced

     

  • 1 mango, chopped

     

  • 1tsp flour

     

  • 1tbsp soy sauce

     

  • 1tbsp honey

     

  • 1/2tsp curry powder

     

  • 500ml chicken stock

     

  • Rice to serve

Directions

  1. Heat the oil in a pot and fry the onion and pepper until soft and browning.
  2. Add the chicken and cook until browning.
  3. Add the mango and cook, stirring for 2-3minutes.
  4. In a separate bowl, mix the flour, soy, honey and stock until smooth and creamy. Stir into the chicken mixture until thickened. Serve with rice and salad
