It’s warm and sweet. Packed with goodness and pretty to look at. Who wants a bowl?
- 2tbsp oil
- 4 red, orange or yellow peppers
- 1 red onion, quartered
- 1 white onion, quartered
- 300g cherry tomatoes
- 500ml vegetable stock
- 1 carton chopped tomatoes
- Toss the onions, peppers and tomatoes in the oil, season and roast in the oven for 30mins.
- Put in a pot along with the stock and chopped tomatoes and blitz.
