Pepper Soup

It’s warm and sweet. Packed with goodness and pretty to look at. Who wants a bowl?


Oven 200c




  • 2tbsp oil


  • 4 red, orange or yellow peppers


  • 1 red onion, quartered


  • 1 white onion, quartered


  • seasoning


  • 300g cherry tomatoes


  • 500ml vegetable stock


  • 1 carton chopped tomatoes


  1. Toss the onions, peppers and tomatoes in the oil, season and roast in the oven for 30mins.
  2. Put in a pot along with the stock and chopped tomatoes and blitz.
