Pasta Bake

Who doesn’t love a good pasta bake?

Serves 4-6

Oven 180c



  • 1tbsp rapeseed oil
  • 350g cooked pasta
  • 1 onion, diced
  • ½ red pepper, diced
  • ½ green pepper, diced
  • 1 courgette, diced
  • 300g quorn mince
  • 2 cartons chopped tomatoes
  • 2tbsp tomato puree
  • 1tbsp tomato ketchup
  • 1tsp sugar
  • 2tsp basil
  • 1 cup red wine (if you have it!!)
  • 4 slices soda bread, blitzed
  • 1tbsp butter
  • 2oz grated cheese
  • 2tsp basil


  1. Heat the oil in a pot, add the onion and peppers and cook for 5minutes until soft.
  2. Stir in the courgette and cook until soft.
  3. Stir in the quorn mince, along with the chopped tomatoes, wine, herbs, tomato puree, ketchup and sugar. Simmer until thickened and reduced.
  4. Stir in the pasta and pour into a greased oven proof dish.
  5. Now for the topping – blitz the soda to crumbs, stir in the cheese, butter, seasoning and basil. Spread over the pasta mix and pop in the oven for 30minutes.
