This is a little bit of summer.
It’s light and fresh and BURSTING with flavour.
- 3tbsp olive oil
- 2tbsp balsamic vinegar
- 2 handfuls of baby mixed salad leaves
- 400g strawberries, halved
- 500g halloumi
- Mix the oil and vinegar in a bowl.
- In a large bowl, toss the strawberries and leaves in the dressing.
- Slice the halloumi and griddle or grill.
- Serve with the strawberry salad resting on top.
