Who doesn’t love a mid week curry? Even better, this one tastes nicer if the make it the night before and let the flavours deepen.
Serves 4
Ingredients
- 1tbsp coconut oil
- 1 onion, diced
- 2 garlic cloves, crushed
- 1tbsp curry powder
- 1tsp cumin
- 1 tin chopped tomatoes
- 1 tin chickpeas
- 1tsp coconut sugar
- 1 lime, juiced
- 60g spinach
- 150g peas
Directions
- Heat the coconut oil and cook the onion and garlic until soft.
- Now add the curry powder and cumin, stirring.
- Next add the chickpeas, peas, chopped tomatoes and coconut sugar and cook for 15mins. Once ready to eat, stir in the spinach and lime juice and season. Serve with rice.
