Heat the oven at 180c

Ingredients

  • 240g plain flour

  • 2.5tbsp baking powder

  • Pinch salt

  • 240ml almond milk

  • 180g coconut sugar

  • 80ml olive oil

  • 1tsp vanilla

  • 225g blueberries

Directions

  • Heat the oven and line a muffin tin.
  • Mix together the flour, baking powder and salt. In a separate bowl, mix the almond milk, coconut sugar, vanilla and olive oil. Combine and stir in the blueberries.
  • Spoon into muffin cases and bake for around 30 minutes.
