Roasted asparagus and lemon pasta salad

Ingredients

  • 225g asparagus, chopped

  • 1tbsp oil

  • 450g pasta

  • 55g sundried tomatoes, chopped

  • 2tbsp oil from tomato jar

  • 4 spring onions, sliced

  • 4tbsp vegan parmesan

  • 4tbsp parsley, chopped

  • 1 lemon, juice and zest

Directions

  • Heat oven to 200c. Place the asparagus on a baking sheet, drizzle in oil and roast for 10minutes
  • . In the meantime, cook the pasta, drain and set aside
  • Add all remaining ingredient, toss and serve.
