Banoffee Parfait

A vegan desert like no other. Perfect for dinner parties or a simple weekend treat.

 

Serves 2

Ingredients

  • For the crumble – 70g almond

     

  • 6 dates

     

  • 2tbsp desiccated coconut

     

  • For the yoghurt – 240g coconut yoghurt

     

  • 1tsp vanilla extract

     

  • 1tbsp maple

     

  • For the caramel – 2tsp peanut butter

     

  • 1tbsp maple

     

  • ½ salt

     

  • To serve – 1 banana, sliced

Directions

  1. Add all the crumble ingredient to a food processor and blitz to a crumb, set aside.
  2. In a small bowl, mix together the yoghurt, vanilla and maple and set aside.
  3. Combine all the caramel ingredient, adding a splash of water if needed.
  4. Layer the parfait into two glasses or jars starting with a couple of tbsp of crumble, coconut yoghurt, the sliced banana and the caramel . Repeat until all ingredient are used up.
