A simple, fast lunch. Great for a working at home day.
- 2 slices of wholemeal bread
- 150g cherry tomatoes, chopped
- 2tbsp olive oil
- 3 garlic cloves, chopped
- 2tbsp smooth tahini
- 2tbsp coriander, chopped
- 1 lime, juiced
- Place the chopped tomatoes in a bowl. Add all remaining ingredient and season. Cover and set aside for 10mins. Toast bread of choice and divide on top.
