Easy chickpea Curry

Who doesn’t love a mid week curry? Even better, this one tastes nicer if the make it the night before and let the flavours deepen.


Serves 4


  • 1tbsp coconut oil


  • 1 onion, diced


  • 2 garlic cloves, crushed


  • 1tbsp curry powder


  • 1tsp cumin


  • 1 tin chopped tomatoes


  • 1 tin chickpeas


  • 1tsp coconut sugar


  • 1 lime, juiced


  • 60g spinach


  • 150g peas


  1. Heat the coconut oil and cook the onion and garlic until soft.
  2. Now add the curry powder and cumin, stirring.
  3. Next add the chickpeas, peas, chopped tomatoes and coconut sugar and cook for 15mins. Once ready to eat, stir in the spinach and lime juice and season. Serve with rice.
