This came about by accident but boy was it good.
- 1tbsp oil
- 2 onions, diced
- 1 large carrot, diced
- 2 red peppers, chopped
- 1 large courgette, halved and sliced
- 200g sugar snaps
- 2 potatoes, chopped
- 1 sweet potato, chopped
- 1 tin coconut milk
- 300ml veg stock
- 4 packs ribbon noodles
- Heat the oil and cook the veg until softening.
- Add the milk and stock. Simmer 20mins.
- Stir in the noodles before eating.
