Spiced Lentil and Squash Soup

Lentil is my families favourite sop so this spicy version gives it that extra warmth and the squash adds some sweetness.


  • Itbsp oil


  • 2 onions, diced


  • 2 garlic, sliced


  • 1 squash, peeled and diced


  • 200g red lentils


  • 1ltr veg stock


  • 1tbsp curry powder


  1. Heat the oil and cook the onion and garlic until soft.
  2. Add all remaining ingredient and simmer for 20mins. Blitz until smooth. Season and enjoy
