Lentil is my families favourite sop so this spicy version gives it that extra warmth and the squash adds some sweetness.
Ingredients
- Itbsp oil
- 2 onions, diced
- 2 garlic, sliced
- 1 squash, peeled and diced
- 200g red lentils
- 1ltr veg stock
- 1tbsp curry powder
Directions
- Heat the oil and cook the onion and garlic until soft.
- Add all remaining ingredient and simmer for 20mins. Blitz until smooth. Season and enjoy
