Can’t beat Mexican and you certainly can’t beat Mexican with a tower of lovely flavours on the top. Here it is, my protein filled, healthy fats packed meal ☺ It’s fast and simple – perfect mid week.

- 4 wraps, grilled
- 1 tin, refried beans
- 1 tin borlotti beans
- 1 tin black beans
- 1tsp cumin
- Small bunch of chives
- 5tbsp salsa
- 2 avocados, sliced
- 40g feta, crumbled
- handful of rocket
- Sprinkle of chilli flakes
Directions
- Slip the wraps under the grill and brown on both sides. Set aside to cool and crisp.
- Put the refried beans, borlotti beans and black beans in a pot with 1tbsp salsa, cumin and the chopped chives and heat through.
- Put a large heap of the bean mix on each wrap. Top with rocket, avocado, 1tbsp salsa, crumble of feta and some chilli flakes. Enjoy!!
