Greek Salad

Ok ladies – SALAD SEASON is here. This is the start of cleaning out, DETOXING and getting freshened up for summer

Ingredients

  • 220g cherry tomatoes, some whole, some halved
  • 2 beef tomatoes, sliced in rings
  • 1 red onion, halved and thinly sliced
  • 1 cucumber
  • 1 green pepper
  • Bunch of dill, chopped
  • Bunch of mint, chopped
  • 3tbsp red wine vinegar
  • 3tbsp olive oil
  • 150g feta, crumbled

Directions

  1. Chop and prepare all the salad ingredients
  2. Halve some of the cherry tomatoes, keep some whole
  3. Cut the cucumber in thick rings
  4. Halve and thinly slice the pepper and onion
  5. Toss everything in a large bowl along with the herbs
  6. Drizzle over the vinegar and oil, toss again
  7. Top with the feta and serve
