Ok ladies – SALAD SEASON is here. This is the start of cleaning out, DETOXING and getting freshened up for summer
Ingredients
- 220g cherry tomatoes, some whole, some halved
- 2 beef tomatoes, sliced in rings
- 1 red onion, halved and thinly sliced
- 1 cucumber
- 1 green pepper
- Bunch of dill, chopped
- Bunch of mint, chopped
- 3tbsp red wine vinegar
- 3tbsp olive oil
- 150g feta, crumbled
Directions
- Chop and prepare all the salad ingredients
- Halve some of the cherry tomatoes, keep some whole
- Cut the cucumber in thick rings
- Halve and thinly slice the pepper and onion
- Toss everything in a large bowl along with the herbs
- Drizzle over the vinegar and oil, toss again
- Top with the feta and serve
