Potato and Chickpea Curry

Fast, CHEAP and packed with the good stuff.

  • 1tbsp oil

     

  • 2 onions, diced

     

  • 3 garlic cloves, sliced

     

  • 1 thumb sized piece of ginger, grated

     

  • 1 pepper, cut in chunks

     

  • 2tsp cumin

     

  • 1/2tsp turmeric

     

  • 1 ½ tbsp garam masala

     

  • 2tsp cinnamon

     

  • 1 carton chopped tomatoes

     

  • 1 tin coconut milk, plus 1 tin water

     

  • 800g potatoes, diced

     

  • 1 carton chickpeas

     

  • Handful spinach

Directions

  1. Heat the oil in a pot, cook the onion, garlic and pepper until soft.
  2. Stir in the spices.
  3. Add the chopped tomatoes, coconut milk and water, potatoes and chickpeas. Simmer for 1 hour, stir in the spinach and enjoy.
