Mexican Tower

Can’t beat Mexican and you certainly can’t beat Mexican with a tower of lovely flavours on the top. Here it is, my protein filled, healthy fats packed meal ☺ It’s fast and simple – perfect mid week.

  • 4 wraps, grilled
  • 1 tin, refried beans
  • 1 tin borlotti beans
  • 1 tin black beans
  • 1tsp cumin
  • Small bunch of chives
  • 5tbsp salsa
  • 2 avocados, sliced
  • 40g feta, crumbled
  • handful of rocket
  • Sprinkle of chilli flakes

Directions

  1. Slip the wraps under the grill and brown on both sides. Set aside to cool and crisp.
  2. Put the refried beans, borlotti beans and black beans in a pot with 1tbsp salsa, cumin and the chopped chives and heat through.
  3. Put a large heap of the bean mix on each wrap. Top with rocket, avocado, 1tbsp salsa, crumble of feta and some chilli flakes. Enjoy!!
